Temp Monitoring

I recently bought a water cooling system that I will hopefully be installing this weekend if work isn't too crazy.  I'd like to get a good reading of my temps on air cooling and then on water cooling.  What is some good software to do this?

I'd like it to be able to record the data to a file as when my computer starts heating up now it locks up and i'd like to know what point is does that at.
