So I'm planning on building my next computer and I'm kinda stuck between what kind of wiring to use. I don't know if I want to go IDE or Serial ATA. And SCSI is just too overkill for me..

If given the choice I would go with Serial ATA. SATA hard drives are only slightly more expensive than IDE hard drives and have a higher transfer rate.
Also when it comes to choosing a SATA hard drive I would recommend getting a Maxtor. We use them in all the systems that we build at the store and they have been extremely reliable so far. Plus they don't require the special SATA power connector. They have the ability to get their power from the standard molex connector...
